Hector Botrini has been the chef at SWELL restaurant at Knossos Beach Hotel since 2014. Multillingual and well travelled, Mr. Botrini has received an impressive number of awards throughout his career from both the Greek and foreign press and is one of the few Greek chefs to hold a Michelin star for his restaurants Etrusco and Botrini’s in Athens. He has learned the art of cooking from his father Etrusco Botrini and chef Martin Berasategui. Botrini’s style of cooking is characterized by its simplicity, unique flavors, highly selected first rate ingredients, imagination, and creativity. At SWELL restaurant, he marries Greek cuisine with the local Cretan flavors in the most sumptuous of ways.
